Plain flour 00 Extra T-512 is a special wheat flour of very fine grinding with a lower content of minerals (around 0.512% ash).
Use: Typically used for the preparation of pizza dough, pasta and fine pastries, where a smooth, elastic and fine dough structure is required.
Properties: It has a medium content of protein and gluten, thanks to which the dough holds its shape well, is elastic and at the same time fine. It is finer than classic plain flour T-500 or T-650, but not as extremely fine as T-400.
Color: Light, white, similar to classic plain flour, but with a very fine texture.
