Semi-coarse selected flour T-400 is a type of wheat flour that is made from pure white flour with a low mineral content (approximately 0.40% ash).
Uses: It is most often used for the preparation of cakes, desserts, sponge cakes, noodles and fine pastries, where a smooth, delicate dough structure is desired.
Properties: It has a lower protein and gluten content than plain wheat flour T-500 or T-650, which is why the dough is more fragile and delicate.
Color: Light, very white, because it contains a minimum of bran and minerals.
