T-650 plain wheat flour is a type of wheat flour with a higher mineral content (approximately 0.65% ash) compared to regular T-500 plain flour.
Uses: Suitable for baking bread, rolls, pastries and dumplings, where better nutrition and a firmer dough structure are required.
Properties: It has a higher protein and gluten content than T-500, which increases the dough's ability to trap gas during fermentation and thus the volume of the pastry.
Color: Slightly darker than regular T-500 plain flour, due to the higher content of bran and minerals.
