Sodium tripolyphosphate

Sodium tripolyphosphate (STPP, E451(i)) is a food additive from the group of phosphates, which is mainly used as a stabilizer, emulsifying salt and acidity regulator. It helps to improve water binding, maintain the required consistency and texture of products and increase their stability during processing and storage.

It is mainly used in the meat and fish industry, in the production of processed foods and other food products where its use is permitted.
